Andrea Carlson, at Burdock & Co, has such a nimble mind as a chef, she’s like a jazz musician, creating and riffing on glorious food. But it doesn’t mean she’s out of touch.
Take her Monday pop-up series, Bar Gobo — riffing on the Japanese word for burdock — which runs every few weeks with a DJ and a different food theme with each pop-up. So far, she’s done Bubbles and Buns, Disco Dumplings and the next one, on Nov. 25, features Filipino-inspired drinking food. As usual, it’ll be farm-to-table food, made with organic and ethically-sourced ingredients, priced at $10 per plate.
I find Burdock wines are pretty amazing too — like oh-my-god-delicious and hard-to-get Jean Bourdy Galant des Abbesses dessert wine I sipped there recently.
