This recipe is different to the traditional shredded and pickled beetroot salad. This recipe is fresher and you still don’t drain the beetroot bulbs for that bright red colour and as much flavour as possible. The apples and pineapple shreds ads some sweetness and replaces the vinegar for that tangy goodness you remember. You can include some shredded onions to the mix and top it with feta cheese for texture and presentation.

  • 6 medium beetroots, washed

  • 2 large apples, grated

  • 1 large pineapple, grated

  • 2 tbsp mayonnaise

  • salt and pepper to taste
